I recently came across a video of a man upset about Galentine's Day. He said shouldn't we dismiss Galentine's Day because woman want a man on Valentine's Day. Which got me thinking, first of all not everyone wants a man or significant other for that matter. ANd on top of that, there are so many different relationships where we can nurture and show love to someone else. Our family, friends, and even our self! I had so much fun experimenting in the kitchen, and although the brand ultimately chose my fruit punch popsicles for their campaign, this Valentine’s Day cupcake recipe was too good to keep to myself. I was recently scrolling through Timehop and saw the original photos, and it brought back so many sweet memories, both literally and figuratively!

These Fruit Punch Infused Cupcakes became an instant favorite in our house. I made them for a little birthday get-together I hosted, and they were such a hit that a few friends even asked for the recipe. The best part? They’re incredibly easy to make with minimal ingredients and a sweet twist thanks to Tampico’s vibrant fruit punch.

Why We Love These Valentine Cupcakes

Valentine’s Day in our house is all about creating simple, sweet moments. I love involving my kids in the kitchen, especially when it comes to baking. These cupcakes are colorful, flavorful, and super easy to whip up, even on a weeknight.

What makes these different from your typical box mix cupcakes is the clever (and tasty!) substitution of Tampico Fruit Punch for water. That one switch gives them a subtle fruity flavor and a fun pink tint, perfect for Valentine’s Day.

Valentine Fruit Punch Infused Cupcake Recipe

Ingredients:

- 1 box vanilla cupcake mix (your favorite brand works!)

- Tampico Fruit Punch (substitute for the water in the box instructions)

- 1 egg (or egg substitute if preferred)

- ⅓ cup olive oil (or your preferred oil)

- A few drops of red or pink food coloring

- Frosting (store-bought or homemade—your choice!)

- Tip: You can find easy homemade frosting recipes online or grab a tub of pink vanilla frosting to stay on-theme!

Directions:

Preheat the oven according to the directions on the cupcake mix box.

In a mixing bowl, combine the cupcake mix, egg, olive oil, and Tampico Fruit Punch (in place of the water).

Add a few drops of red or pink food coloring to amp up the Valentine’s Day vibes.

Mix everything well until smooth.

Line your muffin tin with festive cupcake liners and fill each one about ⅔ full.

Bake as directed on the box (usually around 18–22 minutes).

Allow cupcakes to cool completely before frosting.

Decorate with sprinkles, candy hearts, or cute cupcake toppers for a festive touch.

This is the Unicorn Valentine Box I made for my daughter last year. It wasn't too complicated to make. I just took a box, put some white paper on it, and added some details.

I thought I would make it easier for you than it was for me by providing some templates and a few instructions in case you want to make one too. For the horn, I used a Styrofoam cone and wrapped glitter paper around it. I added "hair" with ribbon, but I think it doesn't really needed it. We also added a crown that we found in our party box and I believe it came from Oriental Trading, but I don't have a picture of it. You could easily make your own too.
