I bought a TON of baby food (30 jars to be exact) a while back because Publix was having an awesome BOGO sale that made it (combined with a $1/3 Beechnut coupon) that I made money.
So today (actually Saturday since I just am getting around to posting this) I decided to cook my first recipe. The main reason I picked this one was because it looked easy and I had everything.
Baked Egg Puffs - this is listed under as a breakfast item
Things you need:
nonstick Cooking Spray
2 Large Eggs
4 Large Egg Whites
1/2 cup yellow squash or butternut squash puree = ONE jar Beechnut Squash! :)
2 tablespoons All Purpose Flour - I used Whole Wheat because that is what I had.
2 tablespoons shredded reduced-fat Cheddar cheese - I used mild FULL OF FAT cheddar
1/2 teaspoon baking powder - which was gross and I'm not sure if I should have used it
1/4 teaspoon salt
1. Preheat the oven to 400F. Coat 4 little coffee cups HEAVILY with cooking spray and put on baking sheet.
2. In large bowl, mix eggs, egg whites, squash baby food, cheese, flour, baking powder, and salt. Put in the cups and bake about 15 minutes or until the tops are puffy and the middle isn't runny.

Great idea!!! I have that cookbook too and love it...but I've never thought of using baby food. LOVE IT!

I put this book on my Christmas list. My husband laughed at the title because he knows I like to sneak healthy things into our meals. Thanks for sharing. I love the idea of adding squash puree to an egg dish like this!

ReplyDeleteI made them in mini muffin form for a Easter egg hunt for ages 1-5. They were perfect. You just have to wait until right before it starts to stuff the eggs lol
