Homemade Cake Pops - What to Do with Leftover Birthday Cake

I hate wasting food. You can ask anyone I know. There are people starving all over the world. So, when it comes to what to do with leftover food from events, I am always thinking outside the box. Searching for what to do with leftover birthday cake, I found that you actually make cake pops with cake. You basically make a cake and frosting then it easy peasy from there. PLUS, cake pops are freezable! So, you could make a bunch of cake pops out of the leftover cake, pop them in your freezer, and save them for a later event or a sweet random surprise treat.


Homemade Cake Pops - What to Do with Leftover Birthday Cake


To make the cake pops, you will need left over cake, or you can make a sheet cake plus enough frosting to cover just the cake. I had a bunch of little bites that were about to expire. There was no way we were going to go through them in time and I definitely didn't want to waste them, so I decided to turn them into Vampire Cake Bites for a Halloween charcuterie board. I also already had some candy coating on hand from when I worked with Chocolate Pen so this basically a no brainer recipe for me to create.

What You Need to Make Cake Pops:
Box cake or homemade cake
1 can frosting or homemade.
Candy coating (or melted chocolate)
Optional sprinkles

What You Need to DO:
1. Bake your cake. (Skip this step if using leftover cake) Crumble up cake.
2. Add frosting (skip this if you are using a premade cake.) You will need just enough frosting to cover the cake.
3. Use ice cream scoop and roll crumbled cake into small balls.
4. Place balls on wax paper lined baking sheet and place in freezer if available for an hour. Or you can refrigerate for 4 hours.
5. You can stop there and move balls into a freezer bag. Or...
6. Make candy coating according to directions. Place stick in cake balls and spin in candy coating in circular motion.
7. Place back on baking sheet and put sprinkles on if desired (or dip in sprinkles). If you would like actually cake pops, then you will have to make a box to place them up right. I ended up taking the sticks out and covered the holes with the sprinkled sugar.
8. You can freeze them like this, if desired.

I absolutely was shocked how easy this ended up being! I was able to create yummy little bites and the recipe worked out the first time. I use Chocolate Chip Little Bites muffins, but it would have been super cool if I used red velvet to make bloody vampire bites. Any recipe that I try, and it turns out right the first time is a win in my book. The only critique I would suggest is working with the candy coating was a little harder than I had planned, I did have to thin it out with oil (says to do this on the directions), and then I used a spoon to scrape some of the candy coating off. I would suggest making the cake balls on the smaller side because the bigger the balls were, they would fall off the stick.
