Crockpot White Chicken Chili Recipe {Healthy Comfort Food}

 Since I have came across White Chicken Chili, my entire family has loved it! I have adapted it quite a bit though to make the process easier for me and have more flavor so I thought I would share my updates. This dish is a fairly low calorie dinner option that will leave you full and satisfied especially on those cold winter days. I personally love slow cooker meals because I just throw everything in the pot and then by the time dinner rolls around it's ready to go.


Crockpot White Chicken Chili Recipe {Slow Cooker Healthy Comfort Food} Freezer Meal


For the past two years, this recipe has tied for second in our HOA's annual Chili Cook Off. I might have won this past year if more people voted/participated. But I like to make this because I don't mind if there are leftovers (there never is). My entire family enjoys it and it's highly asked for!

This recipe also makes a great freezer meal! There is so much that if my husband doesn't want to take it as leftovers, I can throw it in a glass Tupperware container with the date in dry erase marker and have saved it for a later night when I didn't have time to prep anything.

What You Need:

1-2 lbs. chicken breast, raw
2 15.5 ounce Great Northern beans drained, but not rinsed
2 4 ounce cans cans diced mild green chilies
1 15.25 oz. can no salt added corn
1 3/4 cups low sodium chicken broth low sodium
1 tbsp. ground cumin
1 tbsp. garlic powder
1 tbsp. onion powder
1 tbsp. chili powder
1/2 tbsp. kosher salt
1/2 tbsp. pepper
8 oz. light cream cheese 

What You Do:

1. In a crock pot add chicken breast, chicken broth, beans, green chilies, corn, and spices.
***Do NOT add in Cream Cheese yet.***
Cover and cook on low for 7-8 hours or high for 5 hours. 

2. Remove chicken and shred. Easiest way to shred is with a mixer of some type, but with a fork is fine as well. Stir back into the chili. 

3. Stir in light cream cheese. Cook on high for 30 minutes. 

4. Optional topping include (but are not limited to): tortilla strips, cheese, green onions, cilantro, tomatoes, and/or a squeeze of lime. My kiddos top theirs with Gold Fish, just make sure you count that into your calorie count if you are keeping track. 

Enjoy!

6-8 servings, but probably could stretch further. Around 300 calories for a cup.
This recipe works well for Weight Watchers if you are on that program. Remember that you can still eat foods you love even while "dieting". You know I don't like that word because eating healthy should be a lifestyle change. You can eat the foods you love, just in moderation. If you eat something high in calories/carbs/fat/sugar, just start over again. Foods aren't "bad" or "good". Find what works for you so you can make this journey a realistic and sustainable lifestyle.
