Taco Southwest Salad with Nasoya Toss'ables

My husband is the chef in our house. He is always coming up with such innovative dishes in the kitchen. I am not as creative as him. He found this recipe on Facebook and tweaked it (like he always does). It is fantastic! It isn't the easiest recipe to make. I would honestly only make when we are having guests over or just for the Hubby and I every once in a while, but it is SO GOOD. I shared a picture on Instagram and people went crazy, so I thought I would share here. Enjoy!

Southwest Taco Salad Recipe


What You Need
Dressing:
1/2 an avocado
1/2 cup chopped cilantro
1 Tablespoon lime juice
1/2 cup plain low fat greek yogurt
1/3 cup water
1/2 tsp salt
1/2 Tablespoon garlic
1/2 Tablespoon cumin

Salad:
Nasoya Toss'ables Garlic & Herb
1 tbsp. olive oil
1/2 packet of taco seasoning
1 head Romaine Lettuce, chopped
1 cup shredded mozzarella cheese
1 cup black beans (we used canned)
1 avocado, diced
1 cup corn (we used canned)
1 cup diced tomatoes
1 cup tortilla strips

What You Do
Directions:
To make the avocado cilantro lime salad dressing, combine all the ingredients for the dressing (avocado, cilantro, lime juice, greek yogurt, water, salt, garlic, and cumin) in a blender or food processor until smooth. Set aside. 

Pour 1 tbsp olive oil into a pan and bring up to medium heat. Add Nasoya Toss'ables Garlic & Herb and taco seasoning, stirring until all pieces are well-coated with the seasoning. Heat, mix, and set aside.

Assemble your salad with a bed of chopped romaine lettuce on the bottom. Then, lay out each topping (Nasoya Toss'ables Garlic & Herb, cheddar jack cheese, black beans, avocado, corn, tomatoes, and tortilla strips) in rows or blend it all together. Top off with the avocado salad dressing and serve immediately. Enjoy!

  11. Never heard of toss'ables but they look good in that salad. This would be perfect in California when we have our hot days and don't want to turn on the stove.

    Do you know how long it and the dressing can be stored for in refrigerator?
