Vegan Peanut Butter Popcorn Recipe

Summer is officially here at our house! That means staying up late with the kiddos and super fun movie nights...possibly under the stars? Any ways...this Vegan Peanut Butter Popcorn Recipe is one of my family's favorites and it will son become of one of yours too!




What You Need:
1/4 cup popcorn kernels
Malaysian Sustainable Palm Oil
Fine salt
1/2 cup honey
1/3 cup sugar
1/2 cup peanut butter (should be free of added sugar)
1/2 teaspoon vanilla
Have a clean paper shopping bag or oversized mixing bowl ready.

What You Do:
1. Heat a 4-quart heavy pan over medium heat and film the bottom with Malaysian Palm Oill. When the oil is hot but not smoking, add the popcorn, shake to distribute, then put a lid on the pan, leaving a small crack for steam to escape. When the first kernel pops, put the lid on all the way. As the popcorn starts popping, shake vigorously to make sure the kernels are distributed evenly. When the popping slows to a few seconds between pops, take the pan off the heat.
2. Pour the popcorn into the paper bag or bowl to cool, and attempt to leave any unpopped kernels behind in the pan. (Coated with peanut butter caramel, the unpopped kernels are a serious tooth hazard). Lightly salt the popcorn to taste.
3. Mix the honey and sugar in a small saucepan and bring to a boil. Let it simmer for about 2 minutes, then remove from the heat and add the peanut butter. Stir vigorously until all the peanut butter is melted, then mix in the vanilla.
4. Immediately pour the peanut butter caramel over the popcorn and stir with a long-handled wooden spoon until it's all coated. Let cool for at least 10 minutes before serving.


Malaysian Sustainable Palm Oil is a healthy replacement for partially hydrogenated oil because it is trans fat free and rich with nutrients. Palm oil can be found in the ingredients labeled on many of your favorite products. Much of the palm oil used in the United States is sustainably grown and produced in Malaysia. Palm oil is non-GMO and ideal for high-temperature cooking. Malaysian Sustainable Palm Oil comes from the fruit of the oil palm tree, which can only grow near the equator. These trees have been producing abundant oil-rich fruit for decades, providing a stable environment for wildlife. A one-acre palm oil plantation produces 11 times more oil than a one acre soybean field. Malaysia is a very progressive, environmentally friendly country. In 2008, the tropical country became the first to produce and export certified sustainable palm oil. By the end of 2019, the country plans to have 100% of its palm oil certified sustainable. Malaysian Sustainable Palm Oil comes in golden and red varieties. Red palm oil is particularly rich in nutrients such as vitamin E (tocotrienols).
