Why This Recipe Works for Parents
As a mom of two, I know how hard it can be to find time for yourself—let alone for a date night with your partner. That’s why this recipe is a favorite in our home. It's:Quick: From prep to plate in about 30 minutes.
Easy: No complicated techniques or hard-to-find ingredients.
Healthy: Packed with protein and heart-healthy fats.
Minimal cleanup: One bowl for breading and one for the egg wash. That’s it.
Plus, if you’re juggling after-school schedules, homework, and the nightly bedtime routine, you can prep the breading mixture in advance and store it in the fridge. That way, all you have to do is coat and bake when the time comes.
Parmesan Almond Crusted Salmon Recipe
What You Need:12 ounces salmon (2 fillets)
1 egg
1–2 tablespoons olive oil (optional for drizzling)
For the breading:
1/3 cup crushed almonds
1/3 cup grated parmesan cheese
1 tablespoon dried basil
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon pepper
What You Do:
Preheat your oven to 350°F.
In a small bowl, whisk the egg.
In a separate bowl, mix together the crushed almonds, parmesan, basil, garlic powder, salt, and pepper.
Dip each salmon fillet in the egg mixture, then press into the breading until well coated.
Place the fillets on a lined baking sheet. Optional: drizzle lightly with olive oil for extra crispiness.
Bake for 18–20 minutes, or until the salmon flakes easily with a fork and the crust is golden brown.
Garlic Roasted Asparagus: Just toss with olive oil, garlic powder, salt, and roast at 400°F for 12–15 minutes.
Lemon Butter Green Beans: Steam fresh green beans and toss with a little lemon juice, melted butter, and salt.
Spinach Salad with Berries and Feta: Add a little sweetness and crunch with fresh strawberries or blueberries, walnuts, and a light vinaigrette.
Mashed Cauliflower or Garlic Mashed Potatoes: A creamy side that balances the crispy texture of the salmon.
Wild Rice Pilaf: Hearty and earthy, it adds depth without overpowering the main dish.
The beauty of this salmon recipe is that it looks and tastes elegant without requiring hours in the kitchen. It’s perfect for:
Celebrating a birthday or anniversary at home
A simple “just because” date night
Meal prepping for busy weeknights when you want something healthy and delicious
And yes, this recipe is kid-approved too! My picky eater even asked for seconds the first time we made it.
Prep ahead: Mix the breading in bulk and store it in a jar to cut down on prep time for future meals.
Double the batch: Leftover salmon makes a delicious salad topping or lunch wrap the next day.

This sounds incredible! I love fish and it is so good for you! Unfortunately, my husband is not a big fan of a lot of fish (which I call fins)! So if I really have a taste for fins, I'll order them when we go out to eat. I do like the fact that the middle man is eliminated and the fish would be delivered fresher than in the store!
ReplyDeleteI definitely have to try this! Fish is my favorite. I plan on trying the recipe
