Deceptively Delicious Baby Food Style - Baked Egg Puffs





I bought a TON of baby food (30 jars to be exact) a while back because Publix was having an awesome BOGO sale that made it (combined with a $1/3 Beechnut coupon) that I made money.


Anyways, I bought it with intentions of giving it to my sister, which I did, but then she decided to get out of the at-home day care business and pursue other avenues, so once again I was stuck with all this baby food. So I thought about donating it, selling it to a consignment shop, and even trading it with other mamas but I never got around to it. Then while cleaning out my pantry, I found Jessica Seinfeld's "Deceptively Delicious" that a friend of mine gave me. And I thought hmmm...this could work.


 So I've decided to cook my way through "Deceptively Delicious" with the help of Beechnut pureed baby food.

So today (actually Saturday since I just am getting around to posting this) I decided to cook my first recipe. The main reason I picked this one was because it looked easy and I had everything.

Baked Egg Puffs - this is listed under as a breakfast item



Things you need:
nonstick Cooking Spray
2 Large Eggs
4 Large Egg Whites
1/2 cup yellow squash or butternut squash puree = ONE jar Beechnut Squash! :)
2 tablespoons All Purpose Flour - I used Whole Wheat because that is what I had.
2 tablespoons shredded reduced-fat Cheddar cheese - I used mild FULL OF FAT cheddar
1/2 teaspoon baking powder - which was gross and I'm not sure if I should have used it
1/4 teaspoon salt

1. Preheat the oven to 400F. Coat 4 little coffee cups HEAVILY with cooking spray and put on baking sheet.

2. In large bowl, mix eggs, egg whites, squash baby food, cheese, flour, baking powder, and salt. Put in the cups and bake about 15 minutes or until the tops are puffy and the middle isn't runny.



Now, let's see how we did:


 I love that my daughter has tears in her eyes. Only my cooking would bring her to tears. She was in fact crying because I wasn't cooking fast enough. HA! She really did love them. They looked like muffins but tasted like eggs. It was such an awesome way for a 20 month old to eat eggs. I can't wait to try more recipes. And I'll let you know how it goes along the way! :)

  1. Great idea!!! I have that cookbook too and love it...but I've never thought of using baby food. LOVE IT!

  10. I made them in mini muffin form for a Easter egg hunt for ages 1-5. They were perfect. You just have to wait until right before it starts to stuff the eggs lol
