Love it or loathe it, the school run is a big part of your child’s day and while it can be a bit of a nightmare getting everyone out of the door on time and not leave anything behind, we somehow manage it 5 days a week.

However, as a parent, keeping your child safe whilst they’re walking to school isn’t always easy. These days motorists are distracted by phones, social media and even eating their breakfast behind the wheel, which means they may not spot you and your child crossing the road until it’s too late. If there’s one meal that’s guaranteed to bring my family to the table with smiles and empty plates, it’s tacos, specifically street-style tacos that remind us of our favorite local Mexican restaurant. In recent months, I’ve found myself trying to recreate more of those comforting restaurant dishes at home, both for the sake of our budget and because it’s become a fun way to get creative in the kitchen.

Our local Mexican restaurant has hands-down the best street tacos, and I’ve been missing them like crazy. So, with a little experimenting (and some surprisingly good results!), I’ve come up with a version of healthy homemade street tacos that everyone in the family loves. They’re colorful, packed with flavor, loaded with protein and veggies, and easy to customize for picky eaters or dietary needs.

As a working parent, I know the value of a meal that’s fast to prep but still feels like something special. These tacos come together in under 30 minutes, can be made in bulk for meal prep, and offer enough variety that everyone, from toddlers to teenagers, can build their own version exactly how they like it.
