Turkey Pinwheels {Easy Crowd-Pleasing Appetizer}

The first time I made these turkey pinwheels or easy sandwich roll ups was at my son's birthday party right before everything shut down. Looking back, I was so glad we had that party even though I was starting to get burned out from get togethers because it was the last event we hosted for a LONG time. Now we are back hosting events again and so I decided to make these refreshing appetizers for our Easter get together. These are so easy to make and were devoured.

There are multiple to ways to make the filling. I think the next time I make it, I am going to add a Ranch dressing mix, but this time I kept it simple with mayo and cream cheese.

What You Need:

1/2 cup mayonnaise
4 oz cream cheese, softened
flour tortillas (I use extreme wellness brand)
1/2 lb. thinly sliced deli turkey
6 leaves leaf lettuce
shredded cheese
Optional "toppings"
bacon crumbles, tomato, pepperoncini, cilantro, ranch seasoning packet, bell pepper

What You Do:

1. In small bowl, mix mayonnaise and cream cheese until smooth. Optional mix ins to stir in: ranch packet, pepperoncini, cilantro, or bacon.
2. Spread about 2 tablespoons mayonnaise mixture on each tortilla. Top each with shredded cheese, slice turkey, and lettuce leaves. Optional: slice of tomato, spinach, bell pepper. Roll up each tortilla tightly. Cut each roll into 8 pieces; to make more secure stick each roll up with a cocktail toothpick. Serve immediately or cover tightly and refrigerate until serving time.

National Pack Your Lunch Day is March 10th and National Picnic Day is June 10th. This recipe makes a great pool side snack or appetizer for events. And is awesome to pack in bento boxes or place on charcuterie boards.

My son loves sushi, and these were a twist on that for his party. It was a Minecraft theme kind of. I was going to make printable labels for all the foods but ended up just serving his favorites. White chocolate pretzel sticks, these "sushi" sandwiches, and chicken wings.
