I was sent some packages of Southside Market Original Beef Sausage to share this original recipe, all opinions are my own. I shared about Southside Market's Smoked Turkey Breast back in November as the perfect main dish at your holiday gatherings, but today I am sharing a summer recipe for your pool or lake side get-togethers. Southside Market has other flavors to choose from including Garlic Smoked Sausage, Jalapeno Cheddar Smoked Sausage, and Summer Sausage.

Southside Market original beef sausage is known by locals and old-timers as "Elgin Hot Sausage" or simply "Hot Guts", this is the sausage that put Southside on the map. All beef, coarsely ground in a natural pork casing, and seasoned with cracked black pepper. It is what we are known for and is our best seller. On any given Saturday, they sell around 1400 lbs. in their Elgin restaurant alone! All of their sausage is made fresh, in-house daily for a level of quality, taste, and enjoyment you can’t find anywhere else. Since 1882.

Creamy Pasta Salad with Sausage Recipe


What You Need:
1 16-ounce package rotini pasta, or pasta of choice
1 package (4 links) Southside Market Original Beef Sausage
1 cup broccoli, chopped
1/2 red onion, minced or roasted corn if you prefer
1 cup grape tomatoes, halved
1 can sliced olives, drained
1 cup shredded cheddar cheese (optional)
Dressing:
3/4 cup mayonnaise
1/2 cup Italian dressing
2 teaspoon sugar (or more, to taste)
Salt and pepper to taste

What You Do:
1. Prepare pasta according to package instructions. Drain and allow to cool for 5-10 minutes. Move on to preparing sausage while waiting.
2. Prepare Southside Market Original Beef Sausage by cutting into slices then halves. Heat sausage with 1-2 tablespoons of oil in a skillet over medium heat. Turn several times to ensure even cooking. The sausage is ready when the internal temperature reaches 165°F. They will be plump with a taught casing and clear juices. Allow to cool for 10 minutes. You could also grill or smoke it. Check out their website for more details. Whie cooling, move on to preparing dressing while waiting (step 4).
3. In a large mixing bowl, stir together sausage, broccoli, red onion, tomatoes, olives, and optional cheese.
4. In a small bowl, combine mayonnaise, Italian dressing, sugar, salt and pepper. Stir well to combine.
5. Pour the dressing over the pasta mix, stir well to combine.
6. Cover, and place in the refrigerator for at least 30 minutes before serving.
