MexAmerica gave me the recent opportunity to try out some of their products and what better way to try out flour tortillas than with enchiladas! My husband loves these and they are so super easy. You are definitely going to want to pin and repin again! :D
1 can cream of chicken soup
1/2 cup sour cream
1 cup picante sauce
2 tsp. chili powder
2 cups cooked chicken - chopped
1/2 cup shredded Monterrey Jack cheese
6 flour tortillas - I used the 100% Whole Wheat Tortillas with Honey from MexAmerica
1 small tomato, chopped
1 green onion, sliced
What you are going to do:
1. Pre-Heat oven to 350. Don't forget because you will be annoyed if you do.
2. Stir soup, sour cream, picante sauce, and chili powder in bowl.
3. Stir 1 cup soup mix, chicken, and cheese in LARGE bowl. It looks like it won't cover everything and you are going to need more. I used more chicken and still didn't need more. Just keep mixing until evenly spread throughout.
4. Divide chicken mix among tortillas. Roll up tortillas and place seam-side up in 2qt baking dish. I always dig out my good old Pyrex I received at my Wedding showers for this.
5. Bake at 350F for 30 minutes OR until enchiladas are hot AND bubbling. 5 minutes before I take them out completely, I like to add some more cheese on top.
6. Top with tomato and onion. As you can see I didn't have these. I already had to run to my in-laws for some sour cream as is.
7. ENJOY!
The honey aspect gave it an extra flavor. And they were worth cutting in to for sure! What I loved the most is that they are a good source of fiber. MexAmerica seems to be sold at Wegmans and Compare Foods, but you can use the store locator found on their website to find their products at a retailer near you.
